Peach cobbler for 2
Hi everyone! Today I’m sharing this quick and simple recipe for peach cobbler. It’s a small batch because if I made a large one I wouldn’t be able to trust myself lol! So if you would like to make this recipe bigger just double the ingredients as you please.
You need two sets of ingredients one for the wet ingredients and one for the dry
Wet Ingredients
- 2-3 ripe peaches (sliced)
- 1 tbsp vanilla extract
- Allspice to taste
- 2-3 tbsp of agave (based on sugar preferences)
- Cinnamon to taste
- ½ tbsp cornstarch
1. Mix all ingredients in a bowl
2. Grease a small pan (around 5x7)
3. Add peach mixture to pan and set aside

Dry Ingredients
- sprinkle of salt
- ½ tbsp vanilla
- ½ tbsp baking powder
- ¼ cup light brown sugar
-2 tbsp (vegan)butter – room temp
1. Mix dry ingredients first
2. Then add wet ingredients
3. If the batter gets too wet add more flour – this will have the consistency of dough
4. Top peaches with dough
5. Sprinkle with cinnamon and cane sugar or brown sugar
6. Bake at 425 degrees for at least ½ hour or until browned

And that's it!! So simple but so good! Top with ice cream (vegan of course) and enjoy!
